One tip for you - if you're wanting to hit the big numbers then you should always ALWAYS use the best gems and enchants possible. Last night you were asking for 23 spellpower on bracers rather than 30 as you didn't have the mats for the latter - Spellpower is your second priority stat, and since you're way over-capped then hit isn't a problem any more: spellpower is the top stat for you. Given the choice between +23 and +30 enchants... just go and buy the extra mats. They're cheap as hell nowadays, or alternatively just run a few heroics: you'll hit lucky and get an enchanter in group easily enough, so the mats should tumble in easily enough.
Keybinds and macros will help, but tbh they won't double your DPS. They might add an extra 5-10%, but given that your spell rotation is basically AB until you proc MB, then you hit the AM button and start again.
I'd suggest you sign for the Sunday evening TOC25 runs, possibly tomorrow's TOC10 too (though that is looking unlikely to happen) - see if you can get a couple of upgrades to your T9 but basically I'd expect your gear to be able to put out 4.5-5k in a 10 man with no real issues.
Another tip (not aimed directly at you but I've noticed a number of raiding mages skip this) - make sure you put Focus Magic on someone. It's not just a buff to the person you apply it to, it'll bump your DPS nicely too (preferably someone who crits a lot anyways to increase the uptime on you). If you die and it's not a wipe make sure you have some buff food to bring you back up to raiding levels - Fish Feast tends only to be laid out on wipes.
Make sure that *something* (I know I recommended Procodile, which you say doesn't work for you but there are countless others out there) is anouncing your procs so you can immediately take advantage of the MB proc.
That's about all I can think of off the top of my head, but if you're still struggling I'd speak to Laktar - he's geared way beyond Fortuna (as his output suggests!) so should be able to advise on anything above and beyond the level I'm at with my mage - chances are that I won't be raiding on Fortuna for a while as we need Splishy's heals for the hard-hitting stuff in ICC.
Also on the clicker/keyboard thing - I'm a clicker for most spells, but I have my "oh shit" buttons bound to keys: ice block, blink, slow fall, invisibility.
